The best thing about cooking up a damper is that you can pretty much use anything you have on hand . Why not try Sammy's "That’ll do method"! Just throw it in and when you think that is enough, that’ll do.
Ingredients
- Self raising flour
- 1 egg
- A bit of beer
- Diced bacon
- Some cheese
- Salt
Method
We are going to start off by adding in some self-raising flour into a bowl. Make a little depression in the centre of the flour and crack in an egg. Give it a quick mix until the flour starts to clump. Add in some beer (Not too much beer though) bit by bit while mixing, until springy. Now add in some diced bacon, some cheese and a pinch of salt. Give it a good mixing. Chuck the damper on some baking paper on a rack (to stop the cheese from sticking to the bottom). Score the top and lightly brush with milk to give it a golden brown crust. Finally sprinkle some more bacon on top and a bit more cheese. Now get it in the camp oven and on the coals for 20-30min.
